Vegan Pecan Pie Bars with Bourbon Caramel Sauce

Pecan Pie is a classic American dish, typically made with a filling of nuts, butter, and a sweetener like corn syrup or sugar. The vegan version replaces the butter with a dairy-free alternative and adds a bit of bourbon for an unexpected kick.

I first tried these Vegan Pecan Pie Bars at a friend' house during a Thanksgiving dinner. I was so amazed by the flavor that I decided to recreate it, adding my own twist with a bourbon caramel sauce.

Ingredients

  • 2 cups pecans
  • 1/2 cup vegan butter
  • 1 cup brown sugar
  • 2 teaspoons bourbon
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup vegan caramel sauce

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with parchment paper.
  2. In a large bowl, combine the flour, baking powder, and salt. In a separate bowl, mix together the vegan butter, brown sugar, bourbon, and vanilla extract.
  3. Pour the wet mixture into the dry ingredients and stir until a dough forms. Press the dough into the bottom of the prepared baking dish.
  4. Bake for 15 minutes, or until lightly golden. Remove from the oven and sprinkle the pecans over the top.
  5. Make the bourbon caramel sauce by combining the vegan caramel sauce and bourbon in a saucepan. Cook over medium heat until the sauce thickens. Pour over the pecans.
  6. Return the baking dish to the oven and bake for an additional 15 minutes, or until the caramel is bubbling and the pecans are toasted.
  7. Allow the bars to cool before cutting into squares and serving.
