Pecan Pie is a classic American dish, typically made with a filling of nuts, butter, and a sweetener like corn syrup or sugar. The vegan version replaces the butter with a dairy-free alternative and adds a bit of bourbon for an unexpected kick.
I first tried these Vegan Pecan Pie Bars at a friend' house during a Thanksgiving dinner. I was so amazed by the flavor that I decided to recreate it, adding my own twist with a bourbon caramel sauce.
Ingredients
- 2 cups pecans
- 1/2 cup vegan butter
- 1 cup brown sugar
- 2 teaspoons bourbon
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup vegan caramel sauce
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with parchment paper.
- In a large bowl, combine the flour, baking powder, and salt. In a separate bowl, mix together the vegan butter, brown sugar, bourbon, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until a dough forms. Press the dough into the bottom of the prepared baking dish.
- Bake for 15 minutes, or until lightly golden. Remove from the oven and sprinkle the pecans over the top.
- Make the bourbon caramel sauce by combining the vegan caramel sauce and bourbon in a saucepan. Cook over medium heat until the sauce thickens. Pour over the pecans.
- Return the baking dish to the oven and bake for an additional 15 minutes, or until the caramel is bubbling and the pecans are toasted.
- Allow the bars to cool before cutting into squares and serving.
