Vegan Raspberry Chia Seed Pudding Parfait

Servings: 2 | 30 minutes | 350 kcal

This recipe was born out of my late-night cravings. I wanted something sweet, light but with a bit of tanginess. It' a perfect dessert on a lazy summer day, or as a refreshing breakfast to kickstart your day.

Ingredients

  • 3 tablespoons chia seeds
  • 1 cup almond milk
  • 2 tablespoons maple syrup
  • 1 cup raspberries
  • 1/2 cup granola
  • a few pieces mint leaves

Instructions

  1. Combine the chia seeds, almond milk and maple syrup in a bowl. Stir until well mixed and let it sit for about 15 minutes until a gel-like texture forms.
  2. In the meantime, mash half of the raspberries in a separate bowl.
  3. Once the chia pudding is ready, layer it with the mashed raspberries and granola in a glass or jar.
  4. Top with the remaining raspberries and a few mint leaves for garnish.
  5. Serve immediately or refrigerate for later use.
