This recipe was born out of my late-night cravings. I wanted something sweet, light but with a bit of tanginess. It' a perfect dessert on a lazy summer day, or as a refreshing breakfast to kickstart your day.
Ingredients
- 3 tablespoons chia seeds
- 1 cup almond milk
- 2 tablespoons maple syrup
- 1 cup raspberries
- 1/2 cup granola
- a few pieces mint leaves
Instructions
- Combine the chia seeds, almond milk and maple syrup in a bowl. Stir until well mixed and let it sit for about 15 minutes until a gel-like texture forms.
- In the meantime, mash half of the raspberries in a separate bowl.
- Once the chia pudding is ready, layer it with the mashed raspberries and granola in a glass or jar.
- Top with the remaining raspberries and a few mint leaves for garnish.
- Serve immediately or refrigerate for later use.
